Steamed Malay sponge cake from Hong Kong

Ma lai go is an airy steamed cake that belongs to Cantonese dim sum and gets its amber-brown colour from brown sugar.

The batter rests for hours so that it develops a spongy, moist crumb when steamed.

Ingredients

  • Flour200 g
  • Brown sugar120 g
  • Eggs3
  • Sweetened condensed milk3 tbsp
  • Baking powder1 tsp
  • Oil3 tbsp

Preparation

  1. Whisk eggs with brown sugar until fluffy.

  2. Stir in condensed milk and oil.

  3. Gently fold in flour and baking powder.

  4. Let the batter rest, covered, for two hours.

  5. Fill into moulds and steam for 20 minutes.
