Fried Chinese dough twist

Mahua are fried, twisted dough strands, a crunchy snack especially known from Tianjin.

The lightly sweetened dough is twisted into braids and fried golden, making it crisp and long-keeping.

  • Wheat flour300 g
  • Sugar60 g
  • Egg1 piece
  • Sesame2 tbsp
  • Baking powder & saltsome of each
  • Oil for fryingplenty

Preparation

  1. Knead flour, sugar, egg and a little water into a firm dough.

  2. Divide the dough into strands and roll out.

  3. Twist two strands each into a braid.

  4. Fry slowly golden over medium heat.

  5. Drain and let cool.
