Cold buckwheat noodles from Gangwon

Makguksu is a specialty of the mountainous Gangwon province: cold buckwheat noodles with a spicy-sweet sauce.

The name hints at its simple, "rough" preparation; in summer the refreshing noodles are especially loved.

Ingredients

  • Buckwheat noodles250 g
  • Gochujang2 tbsp
  • Rice vinegar & sugar1 tbsp each
  • Cucumber & carrotsome of each
  • Kimchi100 g
  • Sesame oil & norisome of each

Preparation

  1. Cook the buckwheat noodles and rinse ice-cold.

  2. Mix gochujang with vinegar, sugar and sesame oil.

  3. Cut cucumber and carrot into fine strips.

  4. Toss the noodles with the sauce.

  5. Top with vegetables, kimchi and nori, serve cold.
