Build-your-own Sichuan soup

Malatang comes from Sichuan and began as a cheap cookshop soup in which boatmen added their own ingredients to a shared pot.

Today you pick vegetables, mushrooms, tofu and noodles one by one and cook them in a numbingly spicy broth of Sichuan pepper and chili.

Ingredients

  • Sichuan pepper & chili2 tbsp each
  • Broth1.2 l
  • Tofu & mushrooms300 g
  • Glass noodles150 g
  • Leafy greens200 g
  • Garlic & sesame pastesome of each

Preparation

  1. Toast Sichuan pepper and chili in oil.

  2. Pour in broth and season.

  3. Add tofu, mushrooms and vegetables by cooking time.

  4. Add the glass noodles last.

  5. Serve in bowls, enrich with sesame paste.
