Indian little pancakes in sugar syrup

Malpua are small, fried Indian pancakes soaked in fragrant sugar syrup.

Popular at festivals like Holi and during Ramadan, they are often served with rabri (reduced milk) and pistachios.

Ingredients

  • Wheat flour150 g
  • Milk200 ml
  • Sugar200 g
  • Cardamom & saffronsome of each
  • Ghee for fryingplenty
  • Pistachiosto garnish

Preparation

  1. Whisk flour with milk into a smooth batter, rest.

  2. Cook sugar with water, cardamom and saffron into a syrup.

  3. Fry small pancakes golden in ghee.

  4. Dip at once into the warm syrup.

  5. Serve scattered with pistachios.
