Mango Sticky Rice

Khao niao mamuang – Thailand's beloved dessert

Mango sticky rice is Thailand's quintessential summer dessert: steamed glutinous rice soaked in salted coconut sauce, with ripe, sun-sweet mango. A harmony of sweet, salty and creamy.

Glutinous rice is not ordinary rice – it is soaked and steamed rather than boiled, which makes it wonderfully sticky. Fully plant-based.

Ingredients

  • Glutinous rice250 g
  • Coconut milk250 ml
  • Sugar3 tbsp
  • Salt1 pinch
  • Ripe mango2
  • Toasted sesame or mung beansto sprinkle

Preparation

  1. Soak the glutinous rice for several hours (ideally overnight), then steam for 20–25 min.

  2. Warm the coconut milk with sugar and salt (do not boil).

  3. Mix most of the coconut sauce into the warm rice, let it rest briefly.

  4. Slice the mango into wedges.

  5. Plate rice with mango, drizzle the remaining coconut sauce, sprinkle with sesame.
