Sichuan eggplant in spicy bean sauce

Mapo qiezi is the eggplant version of the famous mapo tofu from Sichuan.

Soft eggplant pieces bathe in a spicy sauce of doubanjiang, garlic and Sichuan pepper.

Ingredients

  • Asian eggplants500 g
  • Doubanjiang (bean paste)2 tbsp
  • Minced pork150 g
  • Sichuan pepper & garlicsome of each
  • Soy sauce & cornstarchsome of each
  • Spring onion2

Preparation

  1. Cut the eggplants into pieces and fry.

  2. Fry the minced pork crumbly in a wok.

  3. Add doubanjiang, garlic and Sichuan pepper.

  4. Stir in eggplant and a little water.

  5. Thicken with cornstarch and serve with spring onion.
