Mapo Qiezi
Sichuan eggplant in spicy bean sauce
Mapo qiezi is the eggplant version of the famous mapo tofu from Sichuan.
Soft eggplant pieces bathe in a spicy sauce of doubanjiang, garlic and Sichuan pepper.

Ingredients
- Asian eggplants500 g
- Doubanjiang (bean paste)2 tbsp
- Minced pork150 g
- Sichuan pepper & garlicsome of each
- Soy sauce & cornstarchsome of each
- Spring onion2

Preparation
Cut the eggplants into pieces and fry.
Fry the minced pork crumbly in a wok.
Add doubanjiang, garlic and Sichuan pepper.
Stir in eggplant and a little water.
Thicken with cornstarch and serve with spring onion.
