Mechado is a Filipino beef stew with Spanish roots, its name referring to a larded strip of fat.

Beef braises with tomato sauce, soy sauce and bay into a tender Sunday dish.

Ingredients

  • Beef (braising cut)700 g
  • Tomato sauce300 ml
  • Soy sauce3 tbsp
  • Potatoes & carrots400 g
  • Onion & garlicsome of each
  • Bay leaf & peppercornssome of each

Preparation

  1. Cut the beef into cubes and sear.

  2. Add onion and garlic.

  3. Deglaze with tomato and soy sauce.

  4. Braise soft with bay for a long time.

  5. Add potatoes and carrots and finish cooking.
