Yellow noodles in spicy prawn sauce from Muar

Mee bandung is a Malaysian noodle soup from Muar in Johor with a thick, spicy prawn-chili sauce.

Despite the name, the dish has nothing to do with the Indonesian city of Bandung.

Ingredients

  • Yellow egg noodles300 g
  • Prawns150 g
  • Dried shrimp & chili pastesome of each
  • Tomato paste2 tbsp
  • Leafy greens & eggsome of each
  • Broth700 ml

Preparation

  1. Fry chili paste and dried shrimp.

  2. Add tomato paste and broth.

  3. Reduce into a spicy sauce.

  4. Cook noodles, prawns and greens in it.

  5. Serve with a poached egg.
