Hand-torn dough noodles in clear broth
Mee hoon kueh is a Hokkien noodle soup with hand-torn flat pieces of dough in a clear broth.
With dried anchovies, minced meat and leafy greens it is a nourishing comfort meal.

- Flour200 g
- Egg1
- Dried anchovies30 g
- Minced pork150 g
- Leafy greens (sweet potato leaves)1 bunch
- Fried shallots2 tbsp

Preparation
Knead flour, egg and water into a firm dough.
Start an anchovy broth.
Tear the dough into flat pieces and add to the broth.
Cook minced meat and leafy greens along.
Serve with fried shallots.
