Filipino pork stew with tomato
Menudo is a Filipino stew of pork and liver in a tomato sauce with potatoes and carrots.
Despite the name it has nothing to do with the Mexican soup and belongs to family gatherings.

- Pork & liver600 g
- Tomato sauce300 ml
- Potatoes & carrots400 g
- Soy sauce2 tbsp
- Onion & garlicsome of each
- Bay leaf & raisinssome of each

Preparation
Sear the pork with onion and garlic.
Deglaze with soy sauce and tomato sauce.
Simmer a while, then add the liver.
Add potatoes, carrots and raisins.
Braise until everything is soft and serve.
