Filipino pork stew with tomato

Menudo is a Filipino stew of pork and liver in a tomato sauce with potatoes and carrots.

Despite the name it has nothing to do with the Mexican soup and belongs to family gatherings.

Ingredients

  • Pork & liver600 g
  • Tomato sauce300 ml
  • Potatoes & carrots400 g
  • Soy sauce2 tbsp
  • Onion & garlicsome of each
  • Bay leaf & raisinssome of each

Preparation

  1. Sear the pork with onion and garlic.

  2. Deglaze with soy sauce and tomato sauce.

  3. Simmer a while, then add the liver.

  4. Add potatoes, carrots and raisins.

  5. Braise until everything is soft and serve.
