Vietnamese crispy fried noodles
Mì xào giòn are deep-fried egg noodles, served as a crisp nest and topped with a glossy stir-fry sauce.
Seafood and crunchy vegetables are tossed in a lightly thickened sauce - the dish clearly shows the Chinese influence on Vietnamese cooking.

- Fresh egg noodles250 g
- Prawns & squid250 g
- Pak choi & carrot200 g
- Oyster sauce2 tbsp
- Soy sauce1 tbsp
- Cornstarch1 tbsp
- Oil for fryingplenty

Preparation
Pre-cook noodles, drain and fry crisp in hot oil.
Sear the seafood briefly.
Add vegetables and stir-fry over high heat.
Season with oyster and soy sauce, thicken with starch.
Pour the glossy sauce over the crispy noodles.
