Thai leaf bites bursting with flavour

Miang kham is a Thai snack in which edible leaves are filled with many small ingredients and eaten in one bite.

Coconut flakes, lime, ginger, shallot and peanuts meet a sweet palm sugar sauce inside a wild pepper leaf.

Ingredients

  • Wild pepper leaves (cha plu)20 pieces
  • Roasted coconut flakes60 g
  • Palm sugar100 g
  • Peanuts & dried shrimpsome of each
  • Lime, ginger & shallotsome of each
  • Chilias desired

Preparation

  1. Reduce palm sugar with a little water into a thick sauce.

  2. Roast the coconut, peanuts and shrimp.

  3. Finely dice lime, ginger and shallot.

  4. Arrange all ingredients in little bowls.

  5. Fill a leaf, drizzle with sauce and eat whole.
