Spicy curry noodles from Aceh

Mie aceh are bold noodles from Aceh province at the northern tip of Sumatra, shaped by Indian and Arab spice influences.

Thick yellow noodles are fried with a curry spice paste and seafood, often also served as a soup version.

Ingredients

  • Thick yellow noodles300 g
  • Shrimp & squid250 g
  • Curry paste (cumin, turmeric)3 tbsp
  • Tomato & chilisome of each
  • Bean sprouts & celerysome of each
  • Shallots & garlicsome of each

Preparation

  1. Fry the curry paste with shallots and garlic.

  2. Add the seafood and fry.

  3. Stir in tomato, chili and a little broth.

  4. Add noodles and bean sprouts and toss through.

  5. Serve scattered with celery.
