Mie Ayam

Indonesian chicken noodles

Mie ayam is a ubiquitous Indonesian noodle dish: wheat noodles topped with seasoned, braised chicken.

The noodles are tossed with soy sauce and rendered oil, served with bok choy, spring onions and often a side broth.

Ingredients

  • Fresh wheat noodles250 g
  • Chicken (cubed)300 g
  • Sweet soy sauce (kecap manis)2 tbsp
  • Garlic & shallotssome of each
  • Bok choy150 g
  • Spring onion2 stalks

Preparation

  1. Braise the chicken with garlic, shallots and kecap manis.

  2. Cook and drain the noodles.

  3. Toss the noodles with a little soy sauce and oil.

  4. Blanch the bok choy.

  5. Plate noodles with chicken, bok choy and spring onion.
