Mie Ayam
Indonesian chicken noodles
Mie ayam is a ubiquitous Indonesian noodle dish: wheat noodles topped with seasoned, braised chicken.
The noodles are tossed with soy sauce and rendered oil, served with bok choy, spring onions and often a side broth.

- Fresh wheat noodles250 g
- Chicken (cubed)300 g
- Sweet soy sauce (kecap manis)2 tbsp
- Garlic & shallotssome of each
- Bok choy150 g
- Spring onion2 stalks

Preparation
Braise the chicken with garlic, shallots and kecap manis.
Cook and drain the noodles.
Toss the noodles with a little soy sauce and oil.
Blanch the bok choy.
Plate noodles with chicken, bok choy and spring onion.
