Vietnamese glass noodle soup with chicken

Miến gà is a light Vietnamese soup of glass noodles in a clear chicken broth.

The translucent mung bean noodles and tender chicken are served with herbs and fried shallots.

Ingredients

  • Glass noodles200 g
  • Chicken400 g
  • Ginger & onionsome of each
  • Fish sauce2 tbsp
  • Fried shallots2 tbsp
  • Coriander & spring onionsome of each

Preparation

  1. Simmer the chicken with ginger and onion into a clear broth.

  2. Remove the chicken and shred into strips.

  3. Season the broth with fish sauce.

  4. Soak the glass noodles and briefly cook in the broth.

  5. Serve with chicken, herbs and fried shallots.
