Mishti Doi

Bengali sweetened yoghurt

Mishti doi is a Bengali dessert of yoghurt sweetened with caramelised sugar or jaggery and fermented in clay pots.

The porous clay draws off excess whey, yielding a dense, creamy yoghurt with a caramel note.

Ingredients

  • Whole milk1 l
  • Jaggery or sugar120 g
  • Yoghurt (as culture)2 tbsp
  • Cardamom1 pinch

Preparation

  1. Reduce the milk until it thickens slightly.

  2. Melt part of the sugar to caramel and stir in.

  3. Dissolve the rest of the jaggery, cool to lukewarm.

  4. Stir in the yoghurt culture and fill into clay pots.

  5. Ferment warm, then chill until set.
