Cold seaweed soup for hot days

Miyeok naengguk is a refreshing cold Korean soup of wakame seaweed.

Served with vinegar, soy sauce and ice cubes, it is a beloved refreshment in summer.

Ingredients

  • Dried wakame seaweed20 g
  • Rice vinegar3 tbsp
  • Soy sauce2 tbsp
  • Garlic & spring onionsome of each
  • Sugar & sesamesome of each
  • Ice water500 ml

Preparation

  1. Soak the wakame and blanch briefly.

  2. Cut into bite-sized pieces.

  3. Season with vinegar, soy sauce and garlic.

  4. Pour in ice-cold water.

  5. Serve with sesame and ice cubes.
