Chicken hot pot from Fukuoka

Mizutaki is a clear chicken hot pot from Fukuoka in which chicken is simmered long until the broth turns milky and rich.

At the table, vegetables and tofu are cooked in the broth and dipped in ponzu sauce.

Preparation

  1. Simmer the chicken long until the broth is milky.

  2. Lightly salt the broth.

  3. Cook vegetables and tofu in the broth at the table.

  4. Serve with ponzu sauce.

  5. Finish by cooking rice or noodles in the broth.
