Mok Pa

Lao steamed fish in banana leaf

Mok pa is a Lao dish of seasoned fish wrapped in banana leaves and steamed.

A paste of lemongrass, dill, chili and roasted rice powder gives the tender fish an intense, fresh aroma.

Ingredients

  • Fish fillet500 g
  • Lemongrass & shallotssome of each
  • Dill & spring onionsome of each
  • Roasted rice powder2 tbsp
  • Fish sauce & chilisome of each
  • Banana leavesfor wrapping

Preparation

  1. Grind lemongrass, shallots and chili into a paste.

  2. Mix fish with paste, dill, rice powder and fish sauce.

  3. Wrap the mixture in banana leaves.

  4. Steam the parcels until the fish is firm.

  5. Serve with sticky rice.
