Thai pork skewers with peanut sauce

Moo satay are Thai pork skewers marinated in a turmeric-coconut marinade and grilled over charcoal.

They are served with a creamy peanut sauce and a sour cucumber relish (ajad).

Ingredients

  • Pork (in strips)500 g
  • Coconut milk200 ml
  • Turmeric & cuminsome of each
  • Peanuts & curry pastesome of each
  • Cucumber & shallots (ajad)some of each
  • Wooden skewersas needed

Preparation

  1. Marinate the pork in coconut milk, turmeric and spices.

  2. Thread onto skewers and grill over charcoal.

  3. Cook peanuts with curry paste and coconut milk into a sauce.

  4. Mix a cucumber relish of vinegar, sugar and cucumber.

  5. Serve the skewers with peanut sauce and relish.
