Morog Polao

Bengali chicken pilaf

Morog polao is a mildly spiced chicken rice from Bangladesh, served at weddings and feasts.

Fragrant chinigura or basmati rice is layered with tender chicken, ghee and whole spices - milder and sweeter than the spicier biryanis.

Ingredients

  • Chicken (in pieces)800 g
  • Basmati or chinigura rice400 g
  • Yoghurt150 g
  • Ghee3 tbsp
  • Onions3 pieces
  • Whole spices (cardamom, cinnamon, clove)some of each
  • Ginger-garlic paste2 tbsp

Preparation

  1. Marinate the chicken with yoghurt and ginger-garlic paste.

  2. Fry onions golden in ghee, add whole spices.

  3. Brown the chicken until it takes colour.

  4. Add rice and hot water.

  5. Steam covered on low heat (dum), season to taste.
