Offal hot pot from Fukuoka

Motsunabe is a hot pot from Fukuoka whose heart is braised beef offal in a savoury broth.

With plenty of cabbage, garlic and chives, it is a hearty winter dish that became popular after the war.

Ingredients

  • Beef tripe (motsu)500 g
  • Pointed cabbage400 g
  • Garlic & chilisome of each
  • Soy sauce or miso4 tbsp
  • Dashi broth1 l
  • Chives & sesamesome of each

Preparation

  1. Clean the tripe thoroughly and pre-boil.

  2. Season the dashi with soy sauce and garlic.

  3. Simmer the tripe soft in the broth.

  4. Add cabbage and chili and cook.

  5. Serve scattered with chives and sesame.
