Mu Shu Rou

Stir-fry of pork, egg and wood ear

Mu shu rou is a northern Chinese stir-fry of tender pork, scrambled egg and wood ear mushrooms.

It is traditionally served with thin wheat pancakes and a little hoisin sauce to roll up.

Ingredients

  • Pork in strips300 g
  • Eggs3
  • Dried wood ear mushrooms20 g
  • Thin wheat pancakes8
  • Hoisin & soy saucesome of each
  • Spring onion & gingersome of each

Preparation

  1. Soak the wood ears and cut into strips.

  2. Whisk the eggs, set them and remove.

  3. Stir-fry the pork in a wok.

  4. Add wood ears, egg and sauce.

  5. Roll up with hoisin in pancakes.
