Mu Shu Rou
Stir-fry of pork, egg and wood ear
Mu shu rou is a northern Chinese stir-fry of tender pork, scrambled egg and wood ear mushrooms.
It is traditionally served with thin wheat pancakes and a little hoisin sauce to roll up.

- Pork in strips300 g
- Eggs3
- Dried wood ear mushrooms20 g
- Thin wheat pancakes8
- Hoisin & soy saucesome of each
- Spring onion & gingersome of each

Preparation
Soak the wood ears and cut into strips.
Whisk the eggs, set them and remove.
Stir-fry the pork in a wok.
Add wood ears, egg and sauce.
Roll up with hoisin in pancakes.
