Crunchy South Indian rice spirals

Murukku is a crunchy South Indian snack of rice and lentil flour pressed into spiral coils.

Especially at Diwali it is fried in large batches and seasoned with cumin.

Ingredients

  • Rice flour200 g
  • Chickpea flour50 g
  • Cumin & sesamesome of each
  • Asafoetida1 pinch
  • Butter2 tbsp
  • Oil for fryingenough

Preparation

  1. Knead the flours with spices, butter and water into a dough.

  2. Fill the dough into a murukku press.

  3. Press spirals onto a spoon or straight into the oil.

  4. Fry golden and crisp.

  5. Drain and let cool.
