Wok-cooked mutton with tomatoes and ginger

Mutton karahi is a Pakistani braise named after the wok-like karahi pan.

Mutton is cooked with tomatoes, ginger and green chilies until the oil rises to the surface.

  • Mutton on the bone800 g
  • Tomatoes500 g
  • Ginger & garlicsome of each
  • Green chilies4
  • Cumin & coriander1 tsp each
  • Oil & saltsome of each

Preparation

  1. Brown the mutton all over in hot oil.

  2. Add garlic and tomatoes.

  3. Cook until the tomatoes break down.

  4. Stir in ginger, chilies and spices.

  5. Braise until the oil separates and serve.
