Myeolchi Bokkeum

Glazed little anchovies

Myeolchi bokkeum is a crisp Korean side dish of tiny dried anchovies.

They are fried in a sweet and salty glaze of soy sauce and syrup and sprinkled with sesame.

Ingredients

  • Dried small anchovies150 g
  • Soy sauce1 tbsp
  • Rice syrup or honey2 tbsp
  • Garlic2 cloves
  • Sesame & sesame oilsome of each
  • Oil1 tbsp

Preparation

  1. Dry-toast the anchovies briefly.

  2. Fry the garlic in oil.

  3. Reduce soy sauce and syrup into a glaze.

  4. Toss the anchovies in it until glossy.

  5. Finish with sesame and sesame oil.
