Crispy rice salad with fermented pork

Nam khao is a Lao salad of deep-fried rice balls that are crumbled and tossed with fermented pork (som moo).

The mix of crispy rice, tangy pork, peanuts and herbs is eaten wrapped in lettuce leaves.

Ingredients

  • Cooked rice400 g
  • Red curry paste2 tbsp
  • Fermented pork (som moo)150 g
  • Egg1 piece
  • Peanuts & limesome of each
  • Coriander & lettuce leavessome of each

Preparation

  1. Mix the rice with curry paste and egg.

  2. Form into balls and deep-fry crisp.

  3. Crumble the rice balls coarsely.

  4. Toss with som moo, peanuts, lime and herbs.

  5. Serve wrapped in lettuce leaves.
