Northern Thai green chili dip

Nam prik num is a smoky chili dip from northern Thailand, made by roasting and pounding green chilies, shallots and garlic.

It is served with sticky rice, steamed vegetables and crispy pork cracklings as a sociable dish.

Ingredients

  • Green chilies8 pieces
  • Shallots & garlicsome of each
  • Fish sauce1 tbsp
  • Lime1 piece
  • Coriander1 bunch
  • Sticky rice & vegetables (side)some of each

Preparation

  1. Roast chilies, shallots and garlic until soft.

  2. Peel and pound coarsely in a mortar.

  3. Season with fish sauce and lime.

  4. Mix in coriander.

  5. Serve with sticky rice and steamed vegetables.
