Northern Thai green chili dip
Nam prik num is a smoky chili dip from northern Thailand, made by roasting and pounding green chilies, shallots and garlic.
It is served with sticky rice, steamed vegetables and crispy pork cracklings as a sociable dish.

- Green chilies8 pieces
- Shallots & garlicsome of each
- Fish sauce1 tbsp
- Lime1 piece
- Coriander1 bunch
- Sticky rice & vegetables (side)some of each

Preparation
Roast chilies, shallots and garlic until soft.
Peel and pound coarsely in a mortar.
Season with fish sauce and lime.
Mix in coriander.
Serve with sticky rice and steamed vegetables.
