Northern Thai chili dip with tomato and pork

Nam prik ong is a mild, tomatoey chili dip from northern Thailand with a little minced pork.

Served with raw vegetables and sticky rice, its colour recalls a spicy bolognese.

Ingredients

  • Minced pork200 g
  • Cherry tomatoes300 g
  • Dried chilies5
  • Shallots & garlicsome of each
  • Fermented bean paste1 tbsp
  • Raw vegetables & sticky riceto serve

Preparation

  1. Pound chilies, shallots and garlic into a paste.

  2. Fry the paste in oil.

  3. Add minced pork and fry crumbly.

  4. Stir in tomatoes and reduce.

  5. Serve with raw vegetables and sticky rice.
