Northern Thai chili dip with tomato and pork
Nam prik ong is a mild, tomatoey chili dip from northern Thailand with a little minced pork.
Served with raw vegetables and sticky rice, its colour recalls a spicy bolognese.

- Minced pork200 g
- Cherry tomatoes300 g
- Dried chilies5
- Shallots & garlicsome of each
- Fermented bean paste1 tbsp
- Raw vegetables & sticky riceto serve

Preparation
Pound chilies, shallots and garlic into a paste.
Fry the paste in oil.
Add minced pork and fry crumbly.
Stir in tomatoes and reduce.
Serve with raw vegetables and sticky rice.
