Waterfall salad of grilled meat

Nam tok is an Isan salad of grilled, sliced meat, closely related to larb but made with whole cuts rather than mince.

The name "waterfall" refers to the juices dripping down as the meat grills; it is dressed with lime, fish sauce and toasted rice powder.

Ingredients

  • Beef steak (or pork)300 g
  • Lime juice3 tbsp
  • Fish sauce2 tbsp
  • Toasted rice powder2 tbsp
  • Chili flakes & shallotssome of each
  • Mint & spring onionsome of each

Preparation

  1. Grill the meat and slice it thin.

  2. Mix lime, fish sauce and chili.

  3. Toss the meat with the dressing.

  4. Add shallots, mint and spring onion.

  5. Sprinkle with rice powder, serve with sticky rice.
