Namkeen Gosht

Lamb with white pepper, Peshawar style

Namkeen gosht is a Pashtun lamb dish from Peshawar that deliberately forgoes many spices.

Only salt, white pepper, ginger and garlic let the pure flavour of the meat shine through.

Ingredients

  • Lamb on the bone800 g
  • White pepper1 tsp
  • Ginger & garlicsome of each
  • Green chilies4
  • Clarified butter (ghee)3 tbsp
  • Saltto taste

Preparation

  1. Sear the lamb vigorously in ghee.

  2. Add ginger, garlic and salt.

  3. Braise in its own juices with a little water.

  4. Stir in white pepper and green chilies.

  5. Cook until the meat is tender and little sauce remains.
