Fried fish in a sweet-sour marinade

Nanbanzuke is a Japanese dish of fried fish placed hot into a sweet-sour marinade of vinegar, soy sauce and chili.

The preparation traces back to Portuguese influences of the Nanban era; the dish is eaten chilled as a starter.

Ingredients

  • Small fish or fillets400 g
  • Rice vinegar4 tbsp
  • Soy sauce & mirin2 tbsp each
  • Onion & carrotsome of each
  • Dried chili2 pieces
  • Flour & oilsome of each

Preparation

  1. Coat the fish in flour and deep-fry crisp.

  2. Cook vinegar, soy sauce, mirin and chili into a marinade.

  3. Cut onion and carrot into fine strips.

  4. Place the hot fish into the marinade, add vegetables.

  5. Steep at least an hour and serve chilled.
