Nasi Bakar

Spiced rice grilled in banana leaf

Nasi bakar is spiced Indonesian rice wrapped in banana leaves and grilled over charcoal.

Filled with chicken, sambal and basil, the rice takes on the smoky aroma of the leaf.

Ingredients

  • Cooked rice500 g
  • Chicken meat200 g
  • Sambal & spice pastesome of each
  • Banana leaves4
  • Thai basil (kemangi)1 bunch
  • Shallots & garlicsome of each

Preparation

  1. Fry the spice paste and cook the chicken in it.

  2. Mix rice with the paste, sambal and basil.

  3. Wrap in banana leaves and pin shut.

  4. Grill the parcels over charcoal.

  5. Cook until the leaf is fragrant and charred.
