Nasi Liwet

Coconut rice from Solo with sides

Nasi liwet is a fragrant rice cooked in coconut milk and chicken broth from the Javanese city of Solo.

It is traditionally served with shredded chicken, chayote curry, egg and a thick coconut cream called areh.

  • Rice400 g
  • Coconut milk400 ml
  • Chicken300 g
  • Lemongrass & bay leafsome of each
  • Shallots & garlicsome of each
  • Egg & chayotesome of each

Preparation

  1. Cook the rice in coconut milk with lemongrass and bay.

  2. Cook and shred the chicken with spices.

  3. Cook chayote in coconut milk into a curry.

  4. Boil the eggs.

  5. Plate rice with chicken, chayote curry and egg.
