Aromatic tomato rice from Malaysia

Nasi tomato is a festive Malaysian rice cooked with tomato paste, spices and condensed milk.

Its sweetish reddish character pairs especially well with chicken curries like ayam masak merah.

Ingredients

  • Basmati rice400 g
  • Tomato paste3 tbsp
  • Cinnamon, cloves & star anisesome of each
  • Sweetened condensed milk2 tbsp
  • Onion & gingersome of each
  • Ghee or oil2 tbsp

Preparation

  1. Fry onion and whole spices in ghee.

  2. Stir in the tomato paste.

  3. Add the rice and toast briefly.

  4. Pour in water and condensed milk.

  5. Let steam and fluff up loosely.
