Grilled eggplant with sweet miso glaze

Nasu dengaku is a Japanese eggplant brushed with a sweet miso glaze and grilled.

The creamy eggplant and the caramelised miso paste make a deeply umami-rich dish.

Ingredients

  • Japanese eggplants2
  • Miso paste3 tbsp
  • Mirin & sake1 tbsp each
  • Sugar1 tbsp
  • Sesame1 tbsp
  • Oil2 tbsp

Preparation

  1. Halve the eggplants and score the flesh.

  2. Fry cut-side down in oil.

  3. Stir miso with mirin, sake and sugar into a glaze.

  4. Brush the eggplants with the glaze.

  5. Caramelise under the broiler and serve with sesame.
