Grilled eggplant with sweet miso glaze
Nasu dengaku is a Japanese eggplant brushed with a sweet miso glaze and grilled.
The creamy eggplant and the caramelised miso paste make a deeply umami-rich dish.

- Japanese eggplants2
- Miso paste3 tbsp
- Mirin & sake1 tbsp each
- Sugar1 tbsp
- Sesame1 tbsp
- Oil2 tbsp

Preparation
Halve the eggplants and score the flesh.
Fry cut-side down in oil.
Stir miso with mirin, sake and sugar into a glaze.
Brush the eggplants with the glaze.
Caramelise under the broiler and serve with sesame.
