Negiyaki

Savoury scallion pancake from Osaka

Negiyaki is a thin savoury pancake from Osaka with an especially large amount of fine spring onion.

Unlike okonomiyaki it is flatter and often seasoned with soy sauce instead of thick sauce.

Ingredients

  • Flour150 g
  • Dashi broth200 ml
  • Spring onions1 large bunch
  • Egg1
  • Sliced pork belly100 g
  • Soy sauce & bonito flakessome of each

Preparation

  1. Stir flour with dashi and egg into a thin batter.

  2. Fold in plenty of spring onion.

  3. Pour the batter thinly into the pan.

  4. Lay pork belly on top and fry both sides.

  5. Serve with soy sauce and bonito flakes.
