Vietnamese fermented pork sausage
Nem chua is a fermented Vietnamese pork sausage that develops a pleasant tang through lactic fermentation.
Wrapped in banana leaves it matures for a few days and is enjoyed raw with garlic, chili and pepper.

Ingredients
- Lean ground pork500 g
- Pork skin (cooked)100 g
- Roasted ground rice2 tbsp
- Garlic & chilisome of each
- Sugar & saltsome of each
- Banana leavesfor wrapping

Preparation
Mix pork with finely cut skin, sugar and salt.
Fold in roasted rice and garlic.
Portion with a chili and a piece of garlic each.
Wrap tightly in banana leaves.
Ferment warm for a few days, then serve cool.
