Vietnamese fermented pork sausage

Nem chua is a fermented Vietnamese pork sausage that develops a pleasant tang through lactic fermentation.

Wrapped in banana leaves it matures for a few days and is enjoyed raw with garlic, chili and pepper.

Ingredients

  • Lean ground pork500 g
  • Pork skin (cooked)100 g
  • Roasted ground rice2 tbsp
  • Garlic & chilisome of each
  • Sugar & saltsome of each
  • Banana leavesfor wrapping

Preparation

  1. Mix pork with finely cut skin, sugar and salt.

  2. Fold in roasted rice and garlic.

  3. Portion with a chili and a piece of garlic each.

  4. Wrap tightly in banana leaves.

  5. Ferment warm for a few days, then serve cool.
