Nigiri Sushi
Hand-pressed rice with a fish topping
Nigiri sushi emerged in 1820s Edo as fast street food: a hand-pressed ball of rice topped with a slice of fresh fish.
The craft lies in rice that is loose yet holds together, a touch of wasabi and perfectly cut fish.

Ingredients
- Sushi rice300 g
- Rice vinegar3 tbsp
- Sashimi fish (tuna, salmon)200 g
- Wasabi1 tsp
- Soy saucefor dipping
- Pickled gingersome

Preparation
Cook the rice and fold in seasoned rice vinegar.
Cut the fish into even slices.
With wet hands, press small rice ovals.
Smear a little wasabi on the rice.
Lay on the fish, press gently, serve.
