Nigiri Sushi

Hand-pressed rice with a fish topping

Nigiri sushi emerged in 1820s Edo as fast street food: a hand-pressed ball of rice topped with a slice of fresh fish.

The craft lies in rice that is loose yet holds together, a touch of wasabi and perfectly cut fish.

Ingredients

  • Sushi rice300 g
  • Rice vinegar3 tbsp
  • Sashimi fish (tuna, salmon)200 g
  • Wasabi1 tsp
  • Soy saucefor dipping
  • Pickled gingersome

Preparation

  1. Cook the rice and fold in seasoned rice vinegar.

  2. Cut the fish into even slices.

  3. With wet hands, press small rice ovals.

  4. Smear a little wasabi on the rice.

  5. Lay on the fish, press gently, serve.
