Snails in spicy coconut sauce from Saigon

Oc len xao dua are small snails in a creamy-spicy coconut sauce, a Saigon street snack.

They are cooked and slurped out, and the spicy sauce is enjoyed with bread or on its own.

Ingredients

  • Small marsh snails (oc len)1 kg
  • Coconut milk300 ml
  • Lemongrass2 stalks
  • Chili & garlicsome of each
  • Fish sauce & sugarsome of each
  • Thai basil1 bunch

Preparation

  1. Soak and clean the snails thoroughly.

  2. Fry lemongrass, chili and garlic.

  3. Add the snails and stir-fry.

  4. Simmer with coconut milk, fish sauce and sugar.

  5. Serve sprinkled with basil.
