Snails in spicy coconut sauce from Saigon
Oc len xao dua are small snails in a creamy-spicy coconut sauce, a Saigon street snack.
They are cooked and slurped out, and the spicy sauce is enjoyed with bread or on its own.

- Small marsh snails (oc len)1 kg
- Coconut milk300 ml
- Lemongrass2 stalks
- Chili & garlicsome of each
- Fish sauce & sugarsome of each
- Thai basil1 bunch

Preparation
Soak and clean the snails thoroughly.
Fry lemongrass, chili and garlic.
Add the snails and stir-fry.
Simmer with coconut milk, fish sauce and sugar.
Serve sprinkled with basil.
