Spicy Korean cucumber salad

Oi muchim is a quick Korean cucumber salad served as banchan with almost any meal.

Crisp cucumbers are dressed with gochugaru, garlic and sesame and are ready to eat at once.

Ingredients

  • Cucumbers2
  • Gochugaru (chili flakes)1 tbsp
  • Garlic2 cloves
  • Rice vinegar1 tbsp
  • Sesame oil & sesame1 tsp each
  • Salt & sugar1 tsp each

Preparation

  1. Slice the cucumbers thinly.

  2. Salt briefly and let drain.

  3. Mix with gochugaru, garlic and rice vinegar.

  4. Fold in sesame oil and sesame.

  5. Serve immediately as a side dish.
