Okonomiyaki

The savoury pancake “as you like it”

“Okonomi” means “what you like”, “yaki” to grill. This savoury cabbage pancake from Osaka can be topped freely and is cooked on the teppan – street-food cult and comfort food at once.

Unmistakable is the finish: sweet-savoury okonomi sauce, Kewpie mayonnaise, aonori (seaweed powder) and dancing bonito flakes that move in the heat.

Ingredients

  • Pointed cabbage, finely shredded300 g
  • Flour120 g
  • Egg2
  • Pork belly, thin6 slices
  • Okonomi sauce & Kewpie mayoto serve
  • Aonori & bonito flakesto serve
  • Dashi or water100 ml

Preparation

  1. Mix flour, egg, dashi and cabbage into a thick batter.

  2. Spoon the batter into the pan in thick rounds.

  3. Lay pork belly slices on top, flip after a few minutes.

  4. Fry golden on both sides until the cabbage is soft.

  5. Top with okonomi sauce, mayo, aonori and bonito flakes.
