Pandan rice balls with a palm sugar centre

Ondeh-ondeh are Malay rice balls filled with liquid palm sugar and rolled in grated coconut.

When you bite in, the sweet gula melaka centre bursts out; pandan colours and perfumes the dough green.

Ingredients

  • Glutinous rice flour200 g
  • Palm sugar (gula melaka)100 g
  • Pandan juice120 ml
  • Grated coconut100 g
  • Salt1 pinch

Preparation

  1. Knead rice flour with pandan juice into a dough.

  2. Finely chop the palm sugar.

  3. Form small dough balls and fill with sugar.

  4. Boil in bubbling water until they float.

  5. Roll in steamed grated coconut and serve.
