Opor Ayam

Pale Javanese coconut chicken

Opor ayam is a mild, pale coconut curry from Java, traditionally served for Lebaran at the end of Ramadan.

Unlike the red-brown curries, the sauce stays light and creamy thanks to coconut milk and white spices.

Ingredients

  • Chicken pieces1 kg
  • Coconut milk500 ml
  • Shallots & garlicsome of each
  • Candlenut & coriander seedsome of each
  • Lemongrass & lime leavessome of each
  • Galangal & saltsome of each

Preparation

  1. Grind shallots, garlic and nuts into a paste.

  2. Fry the paste with lemongrass and leaves.

  3. Add the chicken and sear all over.

  4. Pour in coconut milk and simmer gently.

  5. Cook until the chicken is tender and the sauce creamy.
