Thai stir-fried mixed vegetables

Pad pak ruam is a quick Thai wok dish of colourful, crunchy mixed vegetables.

A light sauce of oyster and soy sauce with garlic highlights the freshness of the vegetables.

Ingredients

  • Mixed vegetables500 g
  • Garlic3 cloves
  • Oyster sauce2 tbsp
  • Soy sauce1 tbsp
  • Sugar & peppersome of each
  • Oil2 tbsp

Preparation

  1. Cut the vegetables bite-size.

  2. Fry the garlic in the hot wok.

  3. Add the firmer vegetables first.

  4. Season with oyster and soy sauce.

  5. Stir-fry hard and fast to keep them crunchy.
