Pad pak ruam is a quick Thai wok dish of colourful, crunchy mixed vegetables.
A light sauce of oyster and soy sauce with garlic highlights the freshness of the vegetables.

- Mixed vegetables500 g
- Garlic3 cloves
- Oyster sauce2 tbsp
- Soy sauce1 tbsp
- Sugar & peppersome of each
- Oil2 tbsp

Preparation
Cut the vegetables bite-size.
Fry the garlic in the hot wok.
Add the firmer vegetables first.
Season with oyster and soy sauce.
Stir-fry hard and fast to keep them crunchy.
