Pad prik gaeng is a dry Thai stir-fry made with red curry paste instead of coconut milk.

Long beans or bamboo and lime leaves define the intense, spicy dish.

  • Pork in strips300 g
  • Red curry paste2 tbsp
  • Long beans200 g
  • Lime leaves4
  • Fish sauce & sugarsome of each
  • Oil2 tbsp

Preparation

  1. Fry the curry paste in oil.

  2. Add the pork and fry along.

  3. Stir in the long beans.

  4. Season with fish sauce and sugar.

  5. Add lime leaves and toss briefly.
