Smashed cucumber salad with garlic
Pai huang gua is a Chinese appetiser salad of cucumbers that are smashed with a knife.
Smashing gives the rough broken surfaces a better grip on the dressing of garlic, vinegar and sesame oil.

- Cucumbers2
- Garlic3 cloves
- Rice vinegar2 tbsp
- Soy sauce & sesame oil1 tbsp each
- Sugar & saltsome of each
- Chili oilto taste

Preparation
Smash the cucumbers with the flat of a knife.
Break into bite-sized pieces and salt.
Let drain briefly.
Mix with garlic, vinegar, soy sauce and sesame oil.
Serve drizzled with chili oil.
