Smashed cucumber salad with garlic

Pai huang gua is a Chinese appetiser salad of cucumbers that are smashed with a knife.

Smashing gives the rough broken surfaces a better grip on the dressing of garlic, vinegar and sesame oil.

Ingredients

  • Cucumbers2
  • Garlic3 cloves
  • Rice vinegar2 tbsp
  • Soy sauce & sesame oil1 tbsp each
  • Sugar & saltsome of each
  • Chili oilto taste

Preparation

  1. Smash the cucumbers with the flat of a knife.

  2. Break into bite-sized pieces and salt.

  3. Let drain briefly.

  4. Mix with garlic, vinegar, soy sauce and sesame oil.

  5. Serve drizzled with chili oil.
