Rice noodles with shrimp sauce

Pancit palabok is a festive Filipino noodle dish: rice vermicelli under a thick, orange-gold shrimp sauce.

Lavishly topped with shrimp, crispy pork, smoked fish (tinapa), egg and crunchy cracklings - a feast for the eyes at celebrations.

Ingredients

  • Rice vermicelli (bihon)300 g
  • Shrimp200 g
  • Shrimp broth & annattosome of each
  • Cornstarch2 tbsp
  • Smoked fish & pork cracklingssome of each
  • Eggs & limesome of each

Preparation

  1. Cook shrimp broth with annatto and starch into a thick sauce.

  2. Soak and cook the rice noodles.

  3. Pour the sauce over the noodles.

  4. Top with shrimp, fish, egg and cracklings.

  5. Serve with lime wedges.
