Pani Puri

Crisp shells with spiced water

Pani puri (also golgappa) is probably India's most beloved street snack: hollow, crisp dough shells, filled and eaten in one bite.

Each puri is filled with spiced tamarind-mint water, chickpeas and potato - an explosive bite of sour, spicy and crunchy.

Ingredients

  • Puri (ready hollow shells)24 pieces
  • Tamarind paste2 tbsp
  • Fresh mint & coriander1 bunch
  • Cooked chickpeas150 g
  • Potatoes (diced)200 g
  • Chaat masala1 tsp

Preparation

  1. Blend mint, coriander, tamarind and spices into spiced water, chill.

  2. Mix chickpeas and potatoes with chaat masala.

  3. Gently crack open the top of each puri.

  4. Fill with the chickpea-potato mixture.

  5. Dip in the spiced water and eat at once.
